Like it dry..some bopis is a little wet..and i added more chopped liver to make it more heartier..WoohOoooh!

MEOWIE"S note: Bopis (bópiz in Spanish) is a spicy Filipino dish made out of pork lungs and heart sautéed in tomatoes, chilies and onions. Most Filipino men eat bopis (also similar to sisig as "pulutan") with their alcoholic drinks.

Was in a hurry to cook up something easy but tasteful. This is literally a 5 ingredient(s) meal that everybody can do. If you can boil water you can definitely cook shrimp like this.

It's a personal pizza, bought the dough from a local pizzeria and make the sauce and toppings myself. Again, it's very easy breezy.

Meowie's Mushroom and Dried Tomatoes in white sauce with Spaghetti Recipe

Meowie's note: Here's my easy breezy pasta dish..less than half an hour to make as long as you know how to make friends with time, that only means, you gotta know how to prioritize which ones to do first and you'll do just fine!


Ingredients:

1/2 cup finely chopped garlic
1/2 diced onions
1 can of button mushrooms cut into halves
1/2 a cup of milk or cream
2 tbps. of chopped dried tomatoes (for garnish)
butter
vegetable oil
salt and pepper to taste
1/2 lb. of cooked spaghetti

-----------------------------------------------------------------------

Procedure:

Saute` chopped garlic until brown over clarified butter and oil, add the diced onions till the onions became translucent. Make sure the garlic is not burnt before adding the mushrooms.

Add the mushrooms, salt and pepper to taste and the milk/cream. Let it simmer and reduce the sauce for 5 minutes. while its simmering, by this time you have prepared the boiling water for the pasta/spaghetti. Make sure the pasta is al dente/firm but not soggy.

After 5 minutes add the cooked spaghetti and mix everything until thoroughly covered with the white mushroom sauce. Plate the finished dish and sprinkle with chopped dried tomatoes on top.

You can also top it with Parmesano Regiano cheese if you want.

The Alejo Siblings WeBChat Conference

The time was 10 past 11 pm Saturday Night, Eastern time in New York, 2:10 pm in Australia and 11:10 a.m. in Bacolod and Manila.

At first I knew that Manang Shiela will chat with me and so I called Manang Mira right away to let her know of the schedule. I was super surprised when my older brother Manong Jopet was also online, only missing is Manong Caro. I then asked Manong Jopet for Manong Caro's number, dialed it and called him right away...letting him know that all of us are waiting for him. He was washing the dishes and cleaning the house when I called.

When everyone was online, I immediately asked each and every one of them to join in the conference, clicked the handsfree button for the mic/voicechat and the webcam ready. My heart was beating fast..so excited and so overwhelmed that I'll finally see the rest of my siblings!

I have not seen my brother, Manong Caro nor have spoken to him for months! And this is the time that I will finally see him and his kids via webcam. Manong Jopet, I always see and talk via YM and Manang Mira and Manang Shiela I often talk over the phone and chat. So that was like a big relief for me (although it would be better if I see them, hug them in person). But then again, it's better than nothing at all.

I captured the moment..and I was very happy to see them!!! Nothing beats the fact that seeing your family after all these years is a big JOY to my heart! I told them, now I can sleep like a baby tonight!

My only hope is to see them maybe next year and the hope that I can be able to help with some of the concerns of my brothers and sisters. My heart aches each time I hear something that is troubling my siblings, it feels like my heart is going to break into pieces. But here's one thing I know and am sure of, our parents brought us up in a loving and nurturing environment with pure, unconditional love and we all know that they will always be with us no matter what the circumstances are. We may be far from each others grasp..but one day, we will be together again!

HIGHSCHOOL memories..

In honor of my Highschool uniform..I am using BLUE for my font.

Yeah, that's me. Unbelievable how I looked like a girl. ahahah...I vividly remember wetting my hair to make it look so neat in the photo, and am glad it did! ahihihih..till this day whenever I see this photo I remind myself how simplicity is indeed beautiful, no make ups just a plain water and that's it! ahaha...

This is just a small tribute back to memory lane when I met my highschool classmate last night after 14 years. And as we go further, it makes me go back to our silly days, the days we thought all of us can't graduate because all of our teachers hate us including the sister principal and Ms. Mabayag.

So join with me for a little trip back to 1994.

This is May Rodriguez, now she is Mrs. Pereles. She now lives in Duluth, Georgia and works as a HR Manager for United Airways. We've been planning to see each other a few years ago and our schedules didn't jive together.So to keep the long story short, we finally met last night. Since her hotel is just nearby Brooklyn, I figured it would be best to pick her up in front of Junior's Restaurant and go from there to Grill 21 ( a Filipino Restaurant in the West Village) where she told me via Facebook that she was craving for filipino food..and that place was the first thing that came into my mind.

We talked a lot of things and of course the first reaction when we saw each other was like a never ending screaming...(like you would imagine it right? ahaha) The first words were..OMG! OMG! OMG!!! She was screaming..CAROOOLLINEEEE!!! and I screamed back..MAAAAYYYYY!!! ahahahaha..now it seems we were back in highschool once again! Except that we're in New York, me being pregnant and her, a successful career and handsome hubby and a beautiful house in Georgia.
So off we go, we took the subway..we both speak in english most of the time and a little bit of ilonggo. It's not that we're ashamed of our dialect but I guess we were both so used of speaking the language since her hubby is also american (puertorican-american to be exact). Anyways, we couldn't stop talking about how our classmates end up and how big of a difference from way back when and now. Here's an example of our conversation:

May: OMG, do you remember Claire? She has like two kids..and there's a rumor..that _ _ _ _ _ and her had a child that's why she came over here in the states because of that??!?

Meow: Err..REALLLLY?? I have no CLUE. duh. I have my own world when we're in highschool! ahahaha...

May: And who is that teacher of ours in coop?? who speaks soooooo sloooww..

Meow: wait..wait..hmmm.. dli lang..hmmm I can't seem to remember her name!!! waahhh how about Jethro Job Hucalinas???? ahahahah..Si Sir Balidio..( QUOTE: there's a thin line between normal..and abnormal!!) And I have seen Ms. Villamarzo gone crazy! She is selling plastic bags near the plaza!

May: ayy Hoo gle! waahh OMG, OMG! really ms. villamarzo? Who is she??? can't believe that! And remember our English teacher..who is she..ahmm..she was crying after our retreat..because you stood up and told her in a loud voice. MISS, IF YOU WANT US TO RESPECT YOU, YOU BETTER RESPECT US FIRST. aahahahahah..you are sooooo kabalan,Meow!!! ahahahah!!!

It was never ending..even when we parted ways..we were laughing so hard we forgot where we were..and it took us like half an hour to get a cab to take us to her hotel, and from there I took the car service home.We said our goodbyes and till next time May! Next time it's my turn to visit you in Georgia with Carey and baby!

Life is indeed has a lot of surprises to all of us.I remember May was a very intimidating person by the way she looks, and I just knew lately that she wasn't really like that and she thought of me as a very quiet person..wahaha yeah right. quite ka da! I even told her, kasuplada sa imo lantawon ( You really look like a nasty person) and very maldita..(er..I dont have the word for that) and so i never bother making friends with you. wahahaha...and she was really surprised and happy at least despite our differences before we were growing up, we realized how much we have grown.

So my friends and loved ones..if you've got a story to tell about long lost classmates and friends that you have shared some old memories left behind that came alive, please do share!

My newest project..

and Hope that I can do this for 365 days! WAaaaaaaah...



I figured, if I have something to have my time pre-occupied then probably that would be a good therapy for me to ease out my depression and anxiety attacks. I need your support guys and gals...and I thank you in advance for it! Muahh!!!!

Coming to terms with Procastination.

Procrastination is a type of behavior which is characterized by deferment of actions or tasks to a later time. Psychologists often cite procrastination as a mechanism for coping with the anxiety associated with starting or completing any task or decision. [1] Psychology researchers also have three criteria they use to categorize procrastination. They believe that procrastination must be counterproductive, needless, and delaying.[2]

For an individual, procrastination may result in stress, a sense of guilt, the loss of personal productivity, the creation of crisis and the disapproval of others for not fulfilling one's responsibilities or commitments. These combined feelings can promote further procrastination. While it is normal for people to procrastinate to some degree, it becomes a problem when it impedes normal functioning. Chronic procrastination may be a sign of an underlying psychological or physiological disorder.

The word itself comes from the Latin word procrastinatus: pro- (forward) and crastinus (of tomorrow). The term's first known appearance was in Edward Hall's The Union of the Noble and Illustre Famelies of Lancastre and York, first published sometime before 1548.[3] The sermon reflected procrastination's connection at the time to task avoidance or delay, volition or will, and sin.

So therefore I conclude that this matter is in session...






Weelll...to face it and fight this big "P" on my forehead, at least I made an effort to make a list of things to do and hopefully remind my "P" self to constantly not to be lazy, even sometimes I am entitled to. LOL.

Slowly but surely!

ahihih...YES my dearies..am going to finish this project of mine like a freaking needle from my behind that needs to be taken care of..lol so as time goes by I will have some updates..ahahahaha!

That only means...(there it goes again! ahhaha) my brain is also lazy! wahahaha...

Hey, at least I made an effort to do so. Photos..lemme see..i got thousands of them (i mean literally) i have two External Hard drives filled with photos..wahah..I know swearing is a bad thing, but I swear this 4 and 8 gb cards are either a blessing or a curse! and i got 6 of them plus 1 and 2 gbs..am running out of space~ halp!

Geesshh, I just realized that most of my loving friends here and yes including my sister Mira..are MOTHERS! and am going to be a MOTHER soon enooughh!! yay! Am so paranoid and so worried that I really need to stop worrying and start living! So...yes ladies..if you have some motherly support there for me, I badly need it. =(
